The Amaranth or commonly called as Kiwicha (amaranthus caudatus), is at least 4000 years old. It was considered by the Incas a blessing of Mother Earth, due to its medicinal and nutritional properties.
Organic Kiwicha is consumed like any other cereal, has a more balanced composition than conventional cereals, extraordinary nutritional value due to its high content of good quality proteins, minerals, vitamins and essential amino acids. The Kiwicha has a content of 14 to 18% of proteins and a high level of the amino acid Lysine. It also has a high content of calcium, phosphorus, iron, potassium, zinc, vitamin E and vitamin B complex; Its fiber is very fine and soft. It is considered a nutraceutical food because it has an additional benefit for health.
Kiwicha, like quinoa, was selected by NASA for the diet of astronauts for its high nutritional value.
